This [American] abundance of food and our fast-paced convenience culture keep us from recognizing our own personal rhythms. We eat for many reasons, not necessarily because we're physically hungry or need certain nutrients to keep us healthy. . . .

We still don't know what fully nourishes us. If we recognize our hunger, then often we don't know what to eat, how much to eat, when to eat. So we guess. Our guesses at nourishment tend to lead us to familiar foods, comfort foods, convenience foods, and foods that simply don't sustain us.
